Mango Cilantro Dressing

I’m kicking off #fitfoodfriday over on my Facebook page with an

other super easy dressing. This one’s really low in fat and calories because there’s no oil.

In a blender or food processor add:
1/2 cup chopped mango
1/2 Tbs of fresh cilantro (use more or less to suit your taste, you can always sprinkle more on top later)
1/4 tsp. Apple cider vinegar
About 1 Tbs fresh lime juice (I admit I didn’t measure this-I had half a lime and just gave it a good squeeze!)
Dash of onion powder, garlic powder and cayenne (red) pepper
1 tsp honey
Process all until well blended then slowly add:
Liquid (almond, soy, coconut milk or choice) until desired consistency, blending along the way.

This makes about 2 servings. It’s great on salad but you can also brush on chicken, fish or shrimp during the last few minutes of cooking for a spicy sweet sauce.
